5 Tips on Setting Boundaries (& Why It's Important!)
Let’s talk all things CAULIFLOWER. The first time I ever had cauliflower was eating aloo gobi at an Indian restaurant in LA, and let’s admit it – it was probably bc it was drowning in yummy curry and the highlight was truly the potato (LOL). As I started exploring different veggies to add to my life (bc broccoli and brussels apparently aren’t the only ones out there??), I decided to give cauliflower a try and throw it with some easy recipes. In fact, I probably chose it bc it resembled broccoli the most and what could possibly go wrong?!
For background, cauliflower is high in fiber, helps with weight loss, aides in antioxidants, and is a great low-carb alternative to legumes and grains. When comparing to broccoli, broccoli has higher amounts of Vitamin C and K whereas cauliflower has more vitamin B6. Plus, cauliflower keeps you HYDRATED bc it contains 92 grams of water per 100 grams. (yes please!!).

When I was living in NYC a few summers ago, I was literally addicted to cauliflower rice as a rice substitute. I would just add some seasoning in a pan + sauté it. This is perfect to eat with your choice of protein/fiber/etc. Sometimes, I’d even forget it’s not the real deal!
Besides adding oats in my smoothies, I’ve been loving using cauliflower rice as well to add that crunch and keeps me full longer!
Brian loves making homemade pizza and has experimented with different types of crust. One of our fav crusts is cauliflower crust. It’s thin, but it does the trick to resemble regular pizza dough!
You can’t ever go wrong with pasta… or Trader Joe’s. I absolutely love their cauliflower (+ sweet potato) gnocchi. I know some people might call me out on the carbs, but CARBS ARE FRIENDS!!!
I recently tried to wow Brian with my chef skills (rare, I know!!). I decided to randomly do #MeatlessMondays and wanted to try making some yummy roasted cauliflower tacos topped with homemade avocado crema + shredded cabbage.
